About 2 tablespoons rub
_ boneless skinless chicken breast halves
_ tablespoon vegetable oil
_ tablespoon dried tarragon leaves
_ teaspoons dried thyme leaves
_ 1/2 teaspoons dried sage leaves, crumbled
___ teaspoon onion powder
___ teaspoon salt
1. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN, 04-How to Flatten Chicken Breasts).
2. Mix all rub ingredients except oil. Brush both sides of chicken with oil; rub with herb rub.
3. Heat oil in 12-inch nonstick skillet over medium heat. Cook chicken in oil 8 to 10 minutes; turning chicken once, or until chicken is no longer pink in center.
