About 2 tablespoons rub
4 boneless skinless chicken breast halves
1 tablespoon ground coriander
1 tablespoon five-spice powder
1 1/2 teaspoons packed brown sugar
1/2 teaspoon garlic powder
1/8 teaspoon pepper
2 tablespoons vegetable oil
1. Flatten chicken breasts to 1/4-inch thick between plastic wrap or waxed paper (see ALL ABOUT CHICKEN, 04-How to Flatten Chicken Breasts).
2. Mix all rub ingredients oil. Brush both sides of chicken with 1 tablespoon of the oil; rub with spice rub.
3. Heat remaining 1 tablespoon oil in 12-inch nonstick skillet over medium heat. Cook chicken in oil 8 to 10 minutes; turning chicken once, or until chicken is no longer pink in center.
