Chili-Flavored Rice

This rice has a flavorful taste. You can add chopped jalapeno chilis if you like some heat.

Ingredients:

2 tablespoons butter
1/3 cup finely chopped onion
1/3 cup finely chopped scallions or green onions
1/2 cup finely chopped celery
1 teaspoon chili powder
1 cup raw rice
1 1/2 cups fresh or canned chicken broth
salt to taste if desired
freshly ground pepper to taste

Directions:

Heat 1 tablespoon of the butter in a saucepan and add the onion, scallions, celery and chili powder. Cook, stirring, until wilted.

Add rice and stir. Add broth, salt and pepper and bring to a simmer. Cover and cook exactly 17 minutes. Stir in remaining butter and serve.
