This rice has a flavorful taste. You can add chopped jalapeno chilis if you like some heat.Yield: 4 servings
|1/3 cup||finely chopped onion|
|1/3 cup||finely chopped scallions or green onions|
|1/2 cup||finely chopped celery|
|1 teaspoon||chili powder|
|1 cup||raw rice|
|1 1/2 cups||fresh or canned chicken broth|
|salt to taste if desired|
|freshly ground pepper to taste|
Heat 1 tablespoon of the butter in a saucepan and add the onion, scallions, celery and chili powder. Cook, stirring, until wilted.
Add rice and stir. Add broth, salt and pepper and bring to a simmer. Cover and cook exactly 17 minutes. Stir in remaining butter and serve.
