Lemon Rice

Serves 4

Ingredients:

1 cup water
1 cup chicken broth
2 tablespoons lemon juice, freshly squeezed
2 teaspoons butter or margarine
1 cup uncooked rice, long grain
1/4 teaspoon dried basil
1/8-1/4 teaspoon lemon zest
1 1/4 teaspoons lemon pepper seasonings

1 Combine all ingredients EXCEPT lemon pepper in saucepan.

2. Bring to a boil, then reduce heat.

3. Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.

4. Sprinkle with lemon pepper before serving.
