Enchilada-Style Chicken Pie

Dovetailing Tips: Get ready to chop your little heart out! If you chop 4 cups of onions and slice 1/2 cup (1 medium) today then you will be done for the week. It will make for a tearful few minutes, but it will be so worth it!

This recipe calls for 1 cup of cheddar or monterey jack cheese. You will be using both on Thursday so go ahead and shred an extra cup of whichever you choose to use. Or you can shred 2 cups extra and just use the same cheese for all three recipes.

Bonus Tips and Tricks: Save yourself some pain by placing the onions in the freezer for about an hour before you start chopping them You don't want them to be frozen solid, but the lower temperature helps put a stop to the water works!

Dovetailing Tips: Use 1 1/4 cups of chopped onion today. As long as you are chopping a green bell pepper today go ahead and chop 1/4 cup more and save it for Thursdays meal. Shred two cups of swiss chhese instead of just one and then you will have it ready for tomorrow!
