I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Roast Beef And Swiss Sandwich Bake

Serves: 6

2 cups Original Bisquick®
1 cup milk
2 tablespoons yellow mustard
1 egg
1 (6-ounce) package thinly sliced cooked roast beef, chopped
1 cup shredded Swiss cheese (4 ounces)
Freshly ground pepper, if desired


1. Heat oven to 350°. Grease square baking dish, 8 x 8 x 2 inches.

2. Stir Bisquick, milk, mustard and egg until blended. Pour half of the batter into baking dish. Top with half of the roast beef and 1/2 cup of the cheese. Top with remaining roast beef. Pour remaining batter over roast beef.

3. Bake uncovered 45 to 50 minutes or until golden brown and center is set. Sprinkle with remaining 1/2 cup cheese and the pepper. Let stand 5 minutes before serving.

BETTY'S TIP: Vary this dish by using thinly sliced cooked turkey or chicken instead of roast beef and shredded Cheddar cheese instead of Swiss.
