Tuna Melt


Serves: 5

Yield: 1 sandwich

Ingredients

1 small green onion sliced
1 (6-ounce) can albacore tuna drained
2 tablespoons mayonnaise
1/2 teaspoon Dijon style mustard
2 slices firm bread
2 slices slices tomatoes
2 thick slices Cheddar cheese

Directions:

1. Slice the green onion.
2. Mix together the tuna, mayonnaise, mustard, and scallions in a bowl.
3. Spread the tuna mixture on the bread slices, add the tomatoes, and top with the cheese.
4. Place in a toaster oven or the middle rack of the oven, using the broiler setting. (Place directly on the wire rack.) Toast for 3 minutes or until the cheese melts. Serve immediately.

Important tip
Before toasting the sandwich, place a piece of aluminum foil or a pan below the rack to catch any dripping cheese.
