Ingredients

12 inch long italian rolls
4 slices ham
4 slices Genoa salami
4 slices capicolla
4 slices provolone cheese
1 tablespoon olive oil
1 teaspoon balsamic vinegar
salt to taste
pepper to taste
SUGGESTED ADDITIONS
lettuce
tomato
onion
olives

Directions:

1. Cut the bread lengthwise, but not all the way through. Layer with the ham, salami, capicolla, provolone, and any desired additions.
2. Whisk together the oil and vinegar, then drizzle over the sandwich fillings. Add a couple shakes of salt and pepper if you like.

Poor boy or Po' boy—Southeastern United States, especially the Gulf Coast.
Spuckie—Boston, Massachusetts.
Wedge—Yonkers, and parts of the Bronx and New York City.
