Pita Bread

Ingredients

1 1/4 cups warm water
1 tablespoon yeast
1 tablespoon sugar
1 teaspoon salt
3 cups flour
cornmeal

Directions:

Mix all together and knead for a few minutes. Form into a long roll about the size of a French loaf. Cut lengthwise in half. Cut each lengthwise piece into about 12 pieces. Roll each piece into a thin circle. Put on a floured counter. Let rise 45 minutes. Spray baking sheets with cooking spray and sprinkle with corn meal. Bake at 450°F for 3 to 4 minutes until brown. To serve, cut circles in half, forming pockets.
