Warm Cherry Pudding With Cherry Juice Sauce

Ingredients

FOR THE PUDDING:
4 large eggs
1/4 cup granulated sugar
2 tablespoons dark rum
2 teaspoons vanilla extract
pinch kosher salt
1 3/4 cups milk
1 1/2 cups all-purpose flour

2 (16 1/2-ounce) cans Bing red sweet cherries, in juice

FOR THE SAUCE:
1/4 cup granulated sugar
2 tablespoons dark rum
2 tablespoons cornstarch

Directions:

TO MAKE THE PUDDING: In a large bowl beat the eggs and sugar until smooth. Add the rum, vanilla, and salt and beat well. Add the milk and flour mix until the flour is fully incorporated.

Strain the cherries, reserving the juice.

TO MAKE THE SAUCE: In a small saucepan combine the reserved cherry juice, sugar, and rum. Bring to a boil. Meanwhile, dissolve the cornstarch in 2 tablespoons cold water, stirring until smooth. Whisk the cornstarch mixture into the hot cherry juice. Return to a boil. Boil for 1 full minute, whisking constantly, to thicken. Remove from the heat.

Pour one-third of the batter into a greased 4 quart heavy-gauge metal baking dish. Cover the batter with the cherries. Pour the remaining batter over the cherries. Grill over Indirect Medium heat until a toothpick inserted in the center of the pudding comes out clean, 40 to 45 minutes. Keep the grill's temperature as close to 350°F as possible. Serve warm with the sauce.
