Mocha Brownie Sundaes

Ingredients

1/2 cup unsalted butter, cut into 6 to 8 pieces
2 squares (2 ounces) unsweetened baking chocolate, cut into 5 to 6 pieces
1 1/2 tablespoons instant coffee granules
1 cup granulated sugar
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
2 large eggs
1/4 cup all-purpose flour

8 scoops vanilla ice cream
chocolate-syrup

Directions:

Preheat oven to 325°F. In a medium saucepan over low heat, blend the butter, chocolate, and coffee. Stir frequently until the chocolate is melted and the mixture is smooth, about 5 minutes. Remove from the heat and stir in the sugar, vanilla, and salt. Add the eggs and beat until smooth, then add the flour and stir until evenly mixed.

Spread the batter evenly in a greased and floured 9-inch round pie pan. Bake until the top is dry and has puffed slightly, 35 to 40 minutes. Remove from the oven and allow to cool completely the top will sink a bit as it cools. The brownies are easier to remove from the pan if they are allowed to cool for an hour or so first. Cut the brownies into wedges and serve each one with a scoop of ice cream and a dollop of chocolate sauce.
