Peach and Berry Breakfast Cobbler

Ingredients

1 1/2 cups frozen or fresh peaches slices
1 cup frozen or fresh raspberries
1 tablespoon brown sugar
1/2 teaspoon cinnamon
2 tablespoons ground flaxseeds
1/2 cup unsweetened flaked coconut

Directions:

Stir the frozen fruit and brown sugar together in a microwave-safe bowl; heat in the micro-wave on high until the mixture is hot, about 2 minutes, stirring once about 1 minute into the heating process. Stir the cinnamon, ground flaxseeds, and coconut into the heated berries. This is delicious topped with sweetened whipped cream.
