Eggs in a Basket

Ingredients

8 large eggs divided
1/2 cup milk
1/2 teaspoon garlic powder
1/2 teaspoon salt
6 slices day old firm bread crusts removed
1 cup grated cheddar or Monterey Jack cheese

Directions:

Turn toaster oven to bake at 400 degrees.

Prepare 6 (8- to 10-ounce) ramekins generously with nonstick cooking spray. Mix 2 eggs, milk, garlic powder, and salt in a pie pan. Dip bread slices for 10 seconds on each side, then press one soaked bread slice lightly into each ramekin, forming a “basket.”

Crack one of the remaining eggs into each of the six baskets. Sprinkle a little cheese on top and then bake for 15 minutes for slightly soft centers or cook longer for more firm centers. Makes 6 servings.
