Chocolate Bread Pudding Cups

Ingredients

1 cup whole milk
2 tablespoons sugar
1 tablespoon unsweetened cocoa
1 teaspoon vanilla extract
2 large eggs
2 cups cubed (1/2 inch) day old Challah bread
4 ounces semi-sweet baking chocolate coarsely chopped, divided
2 tablespoons unsalted butter or margarine

Directions:

Combine milk, sugar, cocoa powder, vanilla, and eggs. Add bread cubes and toss gently. Cover and chill up to 4 hours.

Turn toaster oven to bake at 350 degrees.

Toss bread mixture with half of the chocolate. Generously butter 4 (8- to 10-ounce) ramekins. Place a generous 1?2 cup of bread mixture into each ramekin. Sprinkle remaining chocolate on top. Bake for 30–35 minutes, or until puffed and firm in centers. Makes 4 servings.
