Mexican Burgers

Ingredients

1 avocado, pitted, peeled and diced
1 plum tomato, diced
2 green onions, chopped
1 to 2 teaspoons lime juice
1 1/4 pounds ground beef
1 egg, beaten
3/4 to 1 cups tortilla chips, crushed
1/4 cup fresh cilantro, chopped
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
salt and pepper to taste
1 1/4 cups shredded Pepper Jack cheese
5 hamburger buns, split

Directions:

Mix together avocado, tomato, onions and lime juice; mash slightly and set aside. Combine ground beef, egg, chips and seasonings in a large bowl. Form into 5 patties; grill over moderately high heat to desired doneness, turning to cook on both sides. Sprinkle cheese over burgers; grill until melted. Serve on buns; spread with avocado mixture.

Tip: Weathered, chippy pots are good buys at barn sales. Cleaned up and dusted off, then filled with long-blooming annuals like pansies or petunias, they’re oh-so pretty!
