Vanilla Pudding

Ingredients

2 tablespoons arrowroot powder or cornstarch
2 tablespoons whole wheat pastry flour
1/2 teaspoon powdered stevia extract
pinch salt
2 cups vanilla flavored soy milk

Directions:

• Mix the arrowroot powder or cornstarch, flour, stevia extract, and salt together in a cup or small bowl. Make a paste with some of the soymilk. Gradually thin out the paste until it will pour. Remove any lumps.
• Gently heat the rest of the milk on low heat. Slowly add the thickeners, stirring gently with a wooden spatula or spoon. Simmer over low heat for 3 to 5 minutes. The mixture will thicken quickly if using arrowroot powder. If using cornstarch, cook the pudding on low long enough to make sure the starch is cooked (about 7 to 10 minutes).
• Spoon the pudding into dessert glasses or bowls.

NOTE: If using plain soymilk or dairy milk, add 2 teaspoons vanilla extract.
