Peanut Butter Oatmeal Muffins

Ingredients

1 cup cooked oatmeal
3/4 cup peanut butter
1 teaspoon vanilla extract
2/3 cup liquid sweetener
1 cup nondairy milk
DRY INGREDIENTS
1 cup whole wheat flour
1 cup unbleached flour
1/2 cup barley flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Directions:

Preheat the oven to 350°F.

In a medium mixing bowl, mix the cooked oatmeal with the peanut butter, vanilla, liquid sweetener, and nondairy milk. Stir until all the lumps are gone.

Add the dry ingredients to the liquid ingredients, and stir well. Fill lightly oiled muffin tins evenly with batter, and bake for 20 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
