Couscous Herb Muffins

Ingredients

1 medium onion chopped
1 teaspoon canola oil
1 tablespoon soy sauce
2 tablespoons canola oil
1 tablespoon liquid sweetener
3/4 cup cooked couscous
1 cup nondairy milk
1 cup unbleached flour
1 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon crushed rosemary
1/2 teaspoon thyme
1 teaspoon crushed sage

Directions:

Preheat the oven to 375°F.

Sauté the onion in the oil and soy sauce until soft.

In a mixing bowl, mix together the oil, liquid sweetener, couscous, and nondairy milk. Add the sauteed onion.

Sift the white flour, wheat flour, baking powder, baking soda, and salt into the bowl of mixed ingredients. Add the rosemary, thyme, and sage, and stir well. Spoon into lightly oiled muffin tins, and bake for 15 minutes.

Test to see if the muffins are done by inserting a toothpick in the middle of a muffin. If the toothpick comes out clean, the muffins are done.
