Vegetable Cheese Soup

Ingredients

1 (15-ounce) can cream-style corn
3 to 4 new or red potatoes quartered
1/2 cup shredded or julienne carrot
1/2 cup chopped onion or 1/4 cup dried mined onion
1/4 teaspoon pepper
2 (14 1/2-ounce) cans vegetable broth
1 1/2 cups shredded Cheddar cheese

Directions:

Combine all ingredients except cheese in greased 3 1/2 to 5-quart slow cooker. Cover and cook on high heat 4~5 hours or on low heat 6-8 hours. Just before serving, stir in cheese until melted. Makes 4~6 servings.

Serve with a salad of leaf lettuce, thawed green peas, sliced green onion, and crumbled bacon.
