Tortilla Soup


Serves: 6

Ingredients

4 boneless skinless chicken breast halves cooked and shredded
1/2 teaspoon minced garlic
2 (14 1/2-ounce) cans chicken broth
2 (14 1/2-ounce) cans stewed tomatoes chopped with liquid
1 cup medium salsa
2 tablespoons dried cilantro
1 tablespoon ground cumin
3 to 4 flour or corn tortillas cut into 1/2 inch strips
cheese grated

Directions:

Combine all ingredients except tortilla strips in greased 4 1/2 to 6-quart slow cooker. Cover and cook on high heat 4-6 hours or on low heat 8-10 hours. Ladle hot soup into individual serving bowls over strips of flour tortilla and grated Monterey Jack or cheddar cheese. Makes 6-8 servings.

Serve with tortilla chips with guacamole and sour cream.
