Vanilla Souffle A La White House

Ingredients

4 tablespoons butter
2 tablespoons flour
1 cup light cream, scalded
5 egg yolk
1/4 cup sugar
1/4 cup vanilla extract
1/2 teaspoon salt
6 egg whites, stiffly beaten
Vanilla Sauce recipe

Directions:

Start heating the oven to 450°F. Butter and sugar a 1-1/2-quart soufflé dish or casserole. In medium-size saucepan, melt the butter. Stir in the flour and cook until mixture starts to turn brown. Gradually stir in scalded cream and cook over medium heat, stirring constantly for about 5 minutes. Beat egg yolks and sugar together in a large bowl and stir in the cream mixture. Add vanilla and salt. Fold in the egg whites. Pour mixture into sugared soufflé dish and bake at 450°F for 10–12 minutes. Then lower the heat to 350°F and bake for an additional 20 minutes. Serve immediately with the vanilla sauce.
