Fried Shrimp Curls

Ingredients

3 pounds shrimp (any size shrimp will do)
1/2 cup Hoy Sien Jeung sauce
6 tablespoons vinegar
1 dozen scallion, cut in 1-inch pieces
3 1-inch pieces ginger root, minced
2 teaspoons soy sauce
salt to taste
freshly ground black pepper to taste
2 tablespoons sugar
1/2 cup oil
3 cloves garlic, minced
1 teaspoon cornstarch

Directions:

Wash the shrimp. Pull off legs, but not shells and tail. Make sauce of Hoy Sien Jeung, sugar, vinegar, salt and pepper. Fry the shrimp in oil for 1 minute on each side. Add the sauce, scallions, ginger, and garlic. Fry for 5 minutes, stirring constantly. Add cornstarch mixed with soy sauce and 1 tablespoon of water. Fry for 2 minutes.

Author’s note: 1/2 teaspoon of garlic salt mixed with 2 tablespoons bouillon may be used instead of the Chinese flavoring Hoy Sien Jeung.
