Ham and Scalloped Potatoes with Green Chiles

Ingredients

3 cups cooked ham, cut into bite-size cubes
3 green onions, chopped
1/2 cup diced green chili
6 medium-size potatoes, peeled and thinly sliced
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon ground black pepper
1/4 cup unseasoned bread crumbs
2 teaspoons paprika

Directions:

Mix together ham, onions, and chiles. Put a layer of sliced potatoes in a well-buttered baking dish and sprinkle some of the ham-and-chile mixture over them. Repeat until sliced potatoes and ham and chile mixture are all used.

Melt butter in a frying pan, whisk in flour, and then slowly pour in milk, whisking constantly until mixture is smooth and starts to thicken. Whisk in mustard, salt, and pepper, and then pour over potato mixture. Top with bread crumbs; sprinkle paprika on top; cover and bake in a 375° oven for one hour. Uncover and bake for 30 more minutes or until potatoes are done.
