whole oatmeal

Ingredients

1 cup soaked oat groats (see note)
1/2 apple, peeled and chopped
1 tablespoon water
2 teaspoons maple syrup or agave nectar
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract (optional)
1/8 teaspoon salt
1/2 cup Almond Milk (recipe found in this chapter)
2 tablespoons raisins, soaked in water for 10 minutes and drained, or 2 tablespoons Dried Fruit Compote (recipe found in Fruits chapter)

food processor

small bowl
small colander or fine-mesh strainer
small saucepan (optional)

Put the oat groats, apple, water, maple syrup, cinnamon, optional vanilla extract, and salt in a food processor fitted with the S blade and process until smooth, stopping occasionally to scrape down the work bowl with a rubber spatula. Serve immediately with the Almond Milk and raisins.

Note: To make 1 cup of soaked oat groats, put 3/4 cup of whole oat groats in a small bowl and cover with water. Let soak for 8 to 12 hours at room temperature. Drain in a fine-mesh strainer and rinse well. Return the groats to the bowl and add enough fresh water to cover. Let soak for 8 to 12 more hours. Drain and rinse again. Stored in a sealed container in the refrigerator, soaked oat groats will keep for 3 days.

Warming Option: Put in a small saucepan over low heat and warm gently for 2 to 3 minutes before adding the Almond Milk and raisins.
