Spinach Frittata

Ingredients

2 (10-ounce) packages frozen chopped spinach
3 eggs
3 ounces (3/4 cup) grated Parmesan cheese
3 tablespoons oil
3 tablespoons matzo meal or bread crumbs
8 ounces small curd cottage cheese (optional)

Directions:

Place spinach in large mixing bowl and let stand until thawed. Do not drain. Blend in all other ingredients. Pour into a greased 9-inch square pan. Bake at 350° about 1 hour or until golden brown. Allow to cool 10 minutes and cut into serving portions.
