Halibut Enchiladas

Ingredients

4 ounces cream cheese, softened
1/4 cup sour cream
1/4 cup mayonnaise or more
1 small can sliced black olives
1 small can chopped Ortega peppers
1/2 medium onion, chopped
1 1/2 cups flaked, baked halibut steaks or fillet (or more)
1 1/2 cans enchilada sauce (hot or regular), divided
1 package corn or flour tortilla
2 cups grated cheese, divided

Directions:

Season flour with salt and pepper to taste. Dip halibut in butter, then in seasoned flour. Place halibut fillets in a greased baking pan and pour 1/2 the remaining butter over them. Bake at 350° for 20–25 minutes, or until fillets flake.

Sauté peaches and almonds in remaining butter. Add lemon juice. Spoon a peach and some juice over each fillet.
