Swedish Meat Balls


Serves: 4

Ingredients

1 pound ground beef
1/2 cup dry bread crumbs
1 egg, slightly beaten
2/3 teaspoon salt
1/8 teaspoon pepper
few grains nutmeg
2 tablespoons olive oil
2 tablespoons butter
2 tablespoons flour
1 3/4 cups consomme
salt and pepper, to taste

Directions:

Combine ground beef, bread crumbs, egg, salt, pepper, and nutmeg form into balls. Cover and let stand 1 hour. Brown meat balls in olive oil. In another griddle melt butter add flour and stir to blend. Gradually add consomme, salt, and pepper while stirring. Add meatballs cover and simmer about 1 hour.
