Cranberry-Orange-Cherry Salad

Ingredients

1 cup fresh cranberries or frozen cranberries
1/2 cup sugar
2 tablespoons grated orange zest
1/2 cup boiling water
1 (3-ounce) package cherry jello
1 cup boiling water
1/2 cup cold water
2 cups celery, chopped
2 cups apples, unpeeled, chopped
1 cup walnuts, chopped
lettuce leaves

Directions:

Grind cranberries. Add sugar and orange rind, mix well let stand for 30 minutes. Add boiling water stir to dissolve sugar refrigerate. Dissolve cherry jello in water. Add cold water and chill slightly until thickened. Stir in cranberry mixture, celery, apples, and walnuts. Pour into molds and chill until set. Unmold on lettuce leaves.
