Boston Baked Beans

Ingredients

2 cups small white beans
6 cups water
1 medium onion, sliced
4 ounces salt pork, cubed
1/2 cup molasses
3 tablespoons sugar
1 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon pepper
1 cup reserved cooking liquid (or enough liquid to cover)

Directions:

Cover 2 cups small white beans with water and soak overnight drain. Place beans in saucepan and add 6 cups water. Cover and simmer about 10 minutes. Drain but reserve liquid. Place in bean pot in layers: cooked beans, onion, and salt pork. Combine molasses, sugar, dry mustard, salt, pepper, and reserved bean cooking liquid. Pour over beans and add any extra cooking liquid to cover contents of bean pot. Bake at 300°F about 4-6 hours until beans are tender. Add more liquid if necessary.
