Working Barn Stew

Ingredients

2 tablespoons olive oil
4 boneless, skinless chicken breast halves (about 1 pound), cut into 1-inch pieces
1 cup chopped onion
1/2 medium green bell pepper, chopped
1/2 medium yellow bell pepper, chopped
1 teaspoon chopped garlic
2 (14 1/2-ounce) cans stewed tomatoes
1 (15-ounce) can pinto bean, drained and rinsed
3/4 cup medium picante sauce
1 tablespoon chili powder
1 tablespoon ground cumin
1/2 cup shredded Cheddar cheese
6 tablespoons sour cream

Directions:

In large stockpot, heat olive oil over medium heat. Add chicken, onion, bell peppers, and garlic; cook until chicken is no longer pink. Add tomatoes, beans, picante sauce, chili powder, and cumin. Reduce heat to low and simmer 25 minutes or up to 2 hours. Place in individual serving bowls and top with cheese and sour cream.
