Ingredients

1 (2 1/2- to 3-pound) broiler-fryer chicken, cut up
1/4 cup cooking oil or olive oil
1 large onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped (1 - 1 1/2 cups)
2 (8-ounce) cans tomato sauce
1 teaspoon crushed dried red pepper
1 teaspoon salt
1/4 teaspoon Tabasco
2 cloves garlic, chopped
1/2 ounce unsweetened baking chocolate, finely grated

Directions:

Soak chicken briefly (10 -15 minutes) in cold, salted water. Trim off excess fat. Drain chicken pieces in colander. Pat dry with paper towel, if necessary. Heat oil in frying pan or electric skillet to a moderate 300° heat. Brown chicken pieces in oil.
When nicely browned, remove pieces to a Dutch oven or casserole with cover.

In the skillet in which you browned the chicken pieces, sauté onion, garlic, and bell pepper for 10 or 15 minutes on low heat. Add remaining 6 ingredients, mixing well. Simmer about 5 minutes. Spoon sauce over chicken pieces in Dutch oven or casserole. Bake at 350° for one hour.

Fun Fact: On average, approximately 300 marriage licenses are issued per day in Las Vegas, which is known as the “Wedding Capital of the World.” Las Vegas has over 50 wedding chapels (shown here: Chapel of the Flowers). According to the Nevada Department of Human Resources, almost 90 percent of all people married in Nevada come from other states. The glamour of a Las Vegas wedding attracts many celebrities. Elvis and Priscilla, Frank Sinatra and Mia Farrow, Paul Newman and Joanne Woodward, were all married in Las Vegas.
