Stuffed Manicotti

Ingredients

1/2 cup chopped onion
1 1/2 pounds hamburger
1 box large shell pasta or manicotti shell
2 eggs, slightly beaten
1 cup chopped spinach
4 tablespoons chopped parsley
1/2 teaspoon salt
1/4 teaspoon pepper
2 slices French bread, soaked in 1/2 cup milk
1 (26-ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese
1 Parmesan cheese

Directions:

Brown onion and hamburger. Parboil shells about 6 minutes; set aside. Mix all ingredients, except shells, spaghetti sauce, and cheeses. Stuff shells with meat filling. Pour 1/2 spaghetti sauce in bottom of a 9x13-inch pan. Place stuffed shells, leaving room for shells to expand, and cover with remaining sauce. Sprinkle mozzarella cheese on each shell. Cover and bake for 30 minutes in 350° oven. Uncover and sprinkle with Parmesan cheese. Cook 10 minutes.
