Brown Rice Casserole

Ingredients

1 cup brown rice
1 boiling water
3 tablespoons chopped onions
3 tablespoons bacon drippings
1 pound ground beef
1 (10 3/4-ounce) can chicken and rice soup, condensed
1 (4-ounce) can sliced mushrooms
1/2 cup water
1/8 teaspoon each: celery salt, onion salt, garlic salt, paprika and pepper
1 bay leaf, crumbled

Directions:

Preheat oven to 325°. Place brown rice in a pot and cover with boiling water; cover the pot and let stand 15 minutes. While rice is sitting, sauté onion in bacon fat until lightly browned, then add ground beef, stirring until brown and crunchy. In a large bowl, combine chicken rice soup, mushrooms, water, and spices. Combine ground beef mixture and rice, then add them to the soup and spices mixture; mix thoroughly. Pour mixture into a buttered or greased casserole dish. Bake, covered, at 325° for 1 hour.
