Mulligatawny Soup


Serves: 6

Ingredients

1/4 cup butter
1 medium onion, sliced
1 medium carrot, sliced
1 stalk celery, diced
1 green bell pepper, diced coarsely
1 medium apple, pared, cored, sliced
1 cup cooked chicken, cut up
1/3 cup all-purpose flour
1 teaspoon curry powder
1/8 teaspoon mace
2 whole cloves
1 sprig parsley
2 cups stock ( chicken broth )
1 cup tomato, cooked
salt and pepper to taste

Directions:

In deep kettle, in butter, sauté onion, carrot, celery, green pepper, apple, and chicken. Stir frequently until onions are tender. Gradually stir in remaining ingredients. Simmer, covered 1/2 hour. Serve.
