Pan-Roasted Garlic Chicken

Ingredients

1 cut-up chicken (about 4 pounds), 8-cut
kosher salt and coarsely ground black pepper to taste
2 tablespoons garlic-flavored oils
20 cloves garlic, fresh or jarred organic
8 sprigs rosemary, thyme, ot sage

Directions:

Season the chicken liberally with salt and pepper. Heat the oil in a large, heavy skillet (preferably iron) over medium-high heat. Place the chicken pieces, skin-side down, in the hot oil and cook until browned, about 5 minutes. Turn and brown on the other side, about 3 minutes. Scatter the garlic cloves around the chicken pieces, and place an herb sprig on each chicken piece. Reduce the heat to medium-low, cover, and cook until the chicken is cooked through, 15 to 18 minutes. Rest for about 5 minutes, then carve and serve.
