Southern Corn Chowder (Microwave)

Ingredients

1/2 cup chopped salt pork (may substitute 4 slices bacon)
1 medium onion, chopped
1/2 cup sliced celery
1/2 cup diced green bell pepper
1/4 cup all-purpose flour
2 cups milk
2 potatoes, microwaved and diced
1 teaspoon salt
1 bay leaf
1/2 cup light cream
2 - 3 cups fresh corn, cut from cob

Directions:

Microwave salt pork 2–3 minutes on HiGH. Add onion, celery, and bell pepper. Microwave 2–3 minutes. Mix flour with small amount of the milk and add to above mixture along with the diced potatoes. Add remaining milk, salt, and bay leaf, and heat on HIGH until thickened. add cream and corn. Microwave again on HIGH 4–6 minutes.
