Gourmet Cream of Zucchini Soup


Serves: 5
Total Calories: 39

Ingredients

3 cups sliced onions
3 tablespoons margarine
4 medium zucchini, sliced
4 garlic cloves, minced
1 cup chopped parsley
5 teaspoons chicken bouillon
6 - 8 cups water
dash of pepper

Directions:

In a large kettle, sauté onions in margarine till transparent. Add rest of ingredients. Cook until tender; cool; run through blender. Terrific with homemade cubed bread, fried in margarine until crusty.

Note: Can add more chicken bouillon to suit your taste.
