Pasta with Roasted Sausage

Ingredients

1 quart cherry tomatoes, halved
4 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
4 sweet Italian sausage
1 pound thin spaghetti
1/2 cup grated Romano cheese
fresh parsley

Directions:

In a baking dish, combine the tomatoes, 1 tablespoon olive oil, salt, pepper, thyme, stir well and roast at 350 degrees for 30 minutes until the tomatoes are soft.

In a heavy skillet, heat ½ tablespoon olive oil over medium heat and brown the sausages on all sides. Drain all the fat and transfer the skillet to the 350 degree oven for 15 minutes. Cool the sausages and slice into ¼ inch pieces.

Cook the spaghetti in boiling salted water for 8 minutes and drain into a colander, reserving ½ cup of pasta water.

Combine the spaghetti, remaining olive oil, roasted tomatoes and sausages, pasta water, cheese and garnish with parsley.
