Lasagna

Ingredients

1 (16-ounce) can diced tomato
1 (6-ounce) can tomato paste
1 teaspoon basil flakes
1 teaspoon oregano flakes
1 teaspoon rosemary
1 teaspoon sugar
1 pound low fat cottage cheese
1 pound flat non-cook lasagna noodles, uncooked
1/2 cup non fat shredded mozzarella cheese

Directions:

In a saucepan, combine the diced tomatoes, tomato paste, basil, oregano, rosemary and sugar and simmer for 15 minutes to combine the flavors.

In a casserole greased with non-stick spray, place a layer tomato sauce, then a layer of lasagna noodles, a layer of cottage cheese and then a layer of tomato sauce. Place another layer of noodles, cottage cheese and sauce and repeat until all the noodles have been used. Sprinkle the surface with the mozzarella. Bake for 45 minutes at 350 degrees.
