Stuffed Taco Pasta Shells

Ingredients

1 pound ground beef
1 envelope taco seasoning mix
1 3/4 cups salsa, divided
1 (12-ounce) package jumbo pasta shells, cooked and drained
1 1/2 cups grated Mexican blend cheese

Directions:

Preheat oven to 350 degrees.

In a large frying pan, brown ground beef until no longer pink. Drain if necessary. Stir in the taco seasoning and 3/4 cup salsa; simmer for 2 minutes. Remove from heat. Fill cooked jumbo pasta shells with 1 tablespoon meat mixture. Lay stuffed shells in bottom of a greased 9 x 13-inch baking dish. Spoon remaining salsa over shells; top with cheese. Cover pan with aluminum foil. Bake for 30 minutes, or until hot and cheese has melted.
