Cream of Barley Soup

Ingredients

1 cup pearl barley
1 cup chopped onion
1 cup celery, chopped
1/2 cup chopped leek
3 ham hocks or 2 slices smoked ham, chopped
3 1/2 quarts chicken stock
6 tablespoons instant potato flakes
1 cup heavy cream
BOUQUET GARNISH
6 sprigs parsley
1/2 teaspoon thyme
2 medium bay leaves

Directions:

Wrap herbs in piece of cheesecloth and tie tightly.

Combine the bouquet garnish with all ingredients except mashed potatoe flakes and cream in removable crockpot liner. Place liner in base. Cover and cook on LOW 4-5 hours. Remove ham hocks, if used, and discard. Also, discard bouquet garnish. Add instant mashed potatoes and cream, stirring well. Cook on high for 15 minutes.
