Open & Closed Cucumber Sandwiches

Ingredients

1 (8-ounce) package cream cheese, softened
1 tablespoon grated onion and juice
1 tablespoon minced parsley
1 cucumber, peeled, grated, drained
1 tablespoon lemon juice
1 teaspoon dry ranch-style salad dressing
salt and red pepper to taste
1 loaf white or wheat bread, crusted

Directions:

Combine ingredients except bread. Refrigerate several hours to blend flavors before spreading on bread slices; cover each with another bread slice, if desired; cut into squares. These keep for several days covered and refrigerated, or can be frozen.

Editor's Extra: You may add a drop of green food coloring, if desired. A sprinkle of paprika on open faces is pretty as well as tasty.

Fun Fact: Have a picnic party by meeting several families at a nearby park. Make a picnic list and keep it handy for next time, adding the "forgots" when you get home. Keep a file for different kinds of parties. Computers make easy work of organizing.
