Easy Egg Salad Sandwiches

1/2 cup mayonnaise
1 tablespoon minced sweet pickle
2 tablespoons minced celery
1 tablespoon minced sweet or green onion
2 teaspoons Dijon style mustard
6 hard-boiled eggs, cooled, peeled, chopped
salt and pepper to taste
12 slices bread, crusted (or not)


Mix mayonnaise, pickles, celery, onions, and mustard in a bowl. Stir in eggs and seasoning and stir gently. Spread on 6 slices of bread and top each with another slice of bread. Cut each into 4 squares or triangles. Refrigerate till time to serve.
