Shrimp Pasta Salad

Ingredients

1 cup zesty Italian dressing
1 teaspoon dried basil
1 garlic clove, minced
1 tablespoon capers
1/8 teaspoon crushed red pepper
1 1/2 cups rotini pasta, cooked, cooled
1/2 pound medium shrimp, cooked, peeled
1 cup halved grape tomatoes
3/4 cup pimento-stuffed olives
1/3 cup chopped green bell pepper
3 cups torn salad greens
Feta cheese, crumbled (optional)

Directions:

Whisk together salad dressing with basil, garlic, capers, and red pepper. Pour over pasta, shrimp, tomatoes, olives, and green pepper; toss. Divide salad greens onto 4 –6 plates and spoon pasta mixture over greens. Sprinkle feta on top, if desired.
