Pineapple Coleslaw

Ingredients

4 cups shredded cabbage
1 (15-ounce) can crushed pineapple, partially drained
1/4 cup shredded carrot
1 green onion, diced
1/4 cup chopped green bell pepper
2/3 cup mayonnaise
1/4 cup sour cream
salt and pepper to taste

Directions:

Stir all together well. Refrigerate, covered, if not serving right away.

Editor’s Extra:
Add a 1/3 cup raisins or craisins and a 1/3 cup salted cashews or peanuts for variation.
