Mandarin Spinach Salad

Ingredients

Apricot Vinaigrette:
1/4 cup apricot jelly
3 tablespoons red wine vinegar
1 teaspoon yellow mustard

Salad:
6 cups fresh spinach leaves, stems removed
1 cup halved fresh strawberries
1 (11-ounce) can Mandarin orange, drained
1 green onion, thinly sliced

Directions:

Apricot Vinaigrette:
Cook ingredients in small saucepan, stirring until jelly melts. Refrigerate to cool. Or chill in freezer 10 minutes.

Salad:
In large bowl, combine all ingredients. Drizzle Apricot Vinaigrette over spinach mixture; toss to coat.
