Beer Brats on the Grill

Ingredients

4 fresh bratwurst
1 (12-ounce) can beer
1 medium onion, sliced
1 small red bell pepper, cut into thin strips
1 small green bell pepper, cut into thin strips
1 tablespoon vegetable oil
salt and pepper to taste
4 subway sandwich rolls, split
spicy brown mustard

Directions:

Boil brats in beer one minute, then simmer uncovered 20–25 minutes or until bratwurst are no longer pink in center. Cool; drain and wrap in foil.

Combine vegetables on large sheet of heavy foil. Drizzle with oil and sprinkle generously with salt and pepper. Place another sheet of foil over vegetables; fold up edges to form a packet. Refrigerate up to 24 hours.

Cook packets on grill over medium coals 5–10 minutes till vegetables are tender, turning once. Place bratwurst on grill 10 minutes till heated through.

Grill rolls lightly during last 1–2 minutes of grilling. Serve brats in mustard-lined rolls topped with vegetables.
