Spring Salad

Ingredients

1 cup mayonnaise
1/2 cup sour cream
3 boiled potatoes, peeled, cubed
3 hard-cooked eggs, chopped
1/2 cucumber, diced
3 pickles, chopped
1/4 pound lean ham, chopped
4 - 5 green onions, chopped
1/2 (10-ounce) package peas, cooked
salt
1/4 head lettuce, cut in 1/8-inch strips

Directions:

Mix mayonnaise and sour cream together. Combine potatoes, eggs, cucumber, pickles, ham, onions, peas, and salt to taste. Add about 3/4 of mayonnaise mixture. Chill. When ready to serve, fold in lettuce and mound onto a large serving plate. Ice with remaining mayonnaise mixture and garnish with cherry tomatoes and green onions.
