Elmer’s Pasta Seafood Salad

Ingredients

Salad:
1 pound medium shrimp, cooked, deveined (cut into 3 pieces)
1 1/2 cups coarsely sliced ripe olives
1 1/2 cups coarsely chopped crisp kosher dill pickles
1/2 cup finely diced onion
3/4 cup finely diced celery
4 hard-boiled eggs, chopped
1 pound large elbow macaroni, cooked al dente

Dressing:
3 tablespoons olive oil (good grade)
1 cup mayonnaise
2 tablespoons Worcestershire sauce
1 tablespoon prepared mustard
2 tablespoons lemon juice
1 tablespoon Tabasco
1 tablespoon Old Bay Seafood Seasoning
1 teaspoon Ac'cent
salt and pepper to taste

Directions:

Salad:
Combine all Salad ingredients.

Dressing:
Whip together olive oil and mayonnaise. Add Worcestershire, mustard, lemon juice, and Tabasco, mixing after each addition. Add seasonings. Mix all ingredients thoroughly. Pour Dressing over Salad mixture and chill. Serve on a bed of lettuce.
