Summer Red Potato Salad

Ingredients

3 pounds red potatoes
1 dozen egg
3 to 4 baby dill pickles, chopped
1 can olives, chopped or sliced
4 ribs celery, chopped
1 purple onion, chopped
1 cup salad dressing, such as Miracle Whip®
1/4 cup mustard
4 tablespoons cilantro or parsley, chopped
1/2 cup dill pickle juice

Directions:

Boil the red potatoes and cool. Hard boil the eggs and cool. Cut the red potatoes and eggs into 1/2- to 3/4-inch cubes and put in a large container that has a lid. Add all other ingredients to potatoes and eggs. Put lid on container. Toss ingredients to mix thoroughly. Chill and serve.
